This is a very simple and enjoyable herbal honey.  It is a winter staple and can be used in different recipes.  Purchase organic, fresh ginger root.  Peel off the skin and slice to approximately 1/8 inch in thickness.  Add the ginger to your honey in a ratio of 1 cup of ginger slices for every 2 cups of honey.  The honey will absorb the flavor of the ginger (let set for 24-48 hours and strain out the ginger slices).  The honey can be used in tea, hot lemon water or take a spoonful to sooth a sore/scratchy throat).
