2 cups pineapple chunks

1 (13.5 oz.) can coconut milk

½ cup coconut milk beverage

1 teaspoon vanilla extract

Place all ingredients in a high-speed blender.  Blend until smooth and well combined.  Chill mixture at least three hours in the fridge.  Freeze in an ice cream maker according to manufacturer’s instructions.
